When the relocation of Tsukiji Market to Toyosu was first announced, there were concerns about the decline in visitors and the potential disappearance of the Tsukiji area.
To revitalize the local community and sustain its vibrancy, it was essential to create something iconic originating from Tsukiji.
For 10 years, while running Tsukiji Aozora Sandaime, countless ideas were considered to uplift the Tsukiji area, but none came to fruition.
During this period, the founder decided to move both domestically and internationally, including to Shanghai, Okinawa, and Nagoya, exploring over 1,000 business ideas.
Observing the distinct culinary cultures in these places sparked the idea of combining them into a single concept.

Drawing inspiration from the “Chatan Ryu” yakiniku restaurant in Okinawa, the innovative "grill-free yakiniku" concept was born—an establishment where both domestic and international influences converge.

This bold move from the conventional sushi restaurant model of "making and serving sushi" to a "grilling fish on a teppan and serving it" format is actively carving a new path in the sushi industry.
